啤酒酵母中β-葡聚糖分子结构及构象的研究进展

SCG是以β-1,3葡聚糖为主,β-1,6葡聚糖为辅的一种混合多糖。SCG与细胞壁中的几丁质和蛋白分子交连产生不溶性。在细胞壁中分子构象模型为:线性β-1,3葡聚糖链通过β-1,6键形成分支,此后β-1,3葡聚糖的侧链延伸并交联到其他细胞壁成分上。SCG在酵母细胞壁中的分子结构和生物构象的动态过程状态;动态过程中SCG分子结构和生物构象发生变化的调控机理;有关SCG合成的酶学机理等仍需作进一步的研究。(孙悟)

SCG is a compounded polysaccharide of β-1,3 glucan (main) and β-1,6 glucan (auxiliary). The coupling of SCG with chitin and protein molecules in cell wall resulted in insolubility. The molecular conformation model in cell wall is as follows: linear β-1,3 glucan chain formed branch through β-1,6 bond, then the side chain of β-1,3 glucan extended and cross-linked to other components in cell wall. The dynamic progress of molecular configuration and conformation of SCG in S. cerevisia cell wall, the relative regulation and control mechanism, and the enzymology mechanism of SCG synthesis were still in need of further research.(Tran. by YUE Yang) |
