‬兰陵美酒功能性组分研究(53)

摘要 兰陵美酒是我国历史文化名酒,具有风味怡人,营养健康的特点。本研究系统分析了兰陵美酒中的功能性组分,结果表明,兰陵美酒中除了含有种类丰富的氨基酸(包含人体必需的7种氨基酸)外,还含有多肽、酚酸类化合物、γ-氨基丁酸、功能性低聚糖等多种生理活性成分。定量分析发现,兰陵美酒中总多肽含量在2.37~7.18 g/L之间;γ-氨基丁酸含量在0.01~0.13 g/L之间。兰陵美酒中主要低聚糖有异麦芽糖、潘糖、异麦芽三糖等,总含量在7.00~9.52 g/L之间。采用超高效液相色谱技术在兰陵美酒中检测到9种功能性酚酸类,包括没食子酸、p-羟基苯甲酸、绿原酸、香草酸等,总含量在101.64~304.48 mg/L之间。研究还表明兰陵美酒具有显著的抗氧化功能。采用FRAP法测定兰陵美酒的抗氧化活性发现兰陵美酒具有较高的抗氧化活性。

英文摘要 Lanling Meijiu liquor is a famous liquor product with long history and profound culture. It is popular among consumers due to its pleasant taste and healthcare functions. In this study, the functional components of Lanling Meijiu liquor were analyzed. The results showed that Lanling Meijiu liquor contained rich varieties of amino acids (including 7 essential amino acids human need), peptides, phenolic compounds, functional oligosaccharides and other physiologically-active ingredients. Quantitative analysis indicated that the total polypeptide content of Lanling Meijiu liquor ranged between 2.37 g/L to 7.18 g/L and γ-aminobutyric acid content was within 0.01 g/L to 0.13 g/L. The main oligosaccharides in the liquor included isomaltose, panose, and isomaltotriose etc., and their content was in the range of 7.00 g/L to 9.52 g/L in total. Besides, nine functional phenolic acids, including gallic acid, p-hydroxybenzoic acid, chlorogenic acid and vanillic acid, were detected in the liquor by ultra performance liquid chromatography and their total content was in the range of 101.64 mg/L to 304.48 mg/L. The study also revealed that Lanling Meijiu liquor had significant anti-oxidant functions. FRAP method was adopted and it was found that Lanling Meijiu liquor had high antioxidant activity.
