关于西凤酒质量试点成果纪实(131)

摘要 为了全面提高西凤酒质量升级,1964年4月,轻工业部食品局在西凤酒厂组织全国八大名白酒企业查证统一白酒检测法;1965年3月,陕西省轻工业厅组织西凤酒质量试点,按照酒中香味成分是什么,哪些微生物产生的,工艺上如何运用的研究路线,取得有效科技成果;全国第三届评酒,西凤酒金榜落名,宝鸡市人民政府再次组织各方面力量,组成西凤酒质量技术攻关组,揭开了西凤酒酿造工艺上的秘密及香型的确认,重点取得技术上的新突破,为重获国家名酒夯实基础。

英文摘要 In order to improve the quality of Xifeng liquor all-roundly, in April, 1964, Light Industry Ministry organized experts from 8 famous distilleries nationwide into Xifeng Distillery to unify measurement methods for Baijiu. Then in March, 1965, Shaanxi Provincial Light Industry Department launched pilot production of Xifeng liquor according to the previously summarized methods and some achievements were obtained. However, Xifeng liquor failed in the 3rd National Liquor Contest. Then Baoji government organized the experts and established Xifeng liquor quality technology tackle team and further revealed the secrets in liquor-making technology of Xifeng liquor and identified the flavor type of Xifeng liquor. As a result, the technical breakthroughs finally brought back the glory of famous liquor to Xifeng liquor. (Trans. by YUE Yang)
