制曲药材的选择及配方规律探讨(17)

摘要 制曲是我国传统酿造的特色。药曲在传统酿造和医药中广泛使用,但传统制曲以经验为主,对药材选择和配方规律的探讨很少。本研究基于文献记载的55种酿造和药用曲配方,结合各药材的药性、功效组分等资料,采用频数、聚类和关联分析等多种统计方法,对传统药曲的选材和配方规律进行了初步探讨。结果显示:在所涉及的185种药材中,属于药食两用原料的有38种,其中肉桂、杏仁、姜、甘草等使用频率较高;杏仁、肉桂、白术和甘草在制曲配方中常用于和多种药材配伍;多数酿造用曲和部分药用曲配方在药性方面总体表现为温、辛和归肝、脾、胃经,与酒的特点较为吻合;在药效方面,各药曲配方的总体表现为解表、温里、清热和理气,推测与促进制曲微生物生长代谢和杂菌抑制有关,此外,酿造用曲配方多偏重于血分和抑菌作用,药用曲配方则表现为活血化瘀、利水渗湿、理气、益气等多个方面。本研究可为传统药曲的现代化改造和相关产品开发提供参考。

英文摘要 Starter-making is a feature in Chinese traditional liquor production. Medicinal starter is widely used in traditional liquor production and medicine. However, traditional starter-making mainly depends on experience and the corresponding research on starter-making medicinal herbs and formula is scarce. In this study, based on the 55 starter-making formulas in literature, multiple statistical methods including frequency, clustering and correlation analysis were adopted to explore the selection of medicinal herbs and the rules in starter-making formula. The results revealed that, among all the related 185 kinds of medicinal herbs, 38 belongs to edible & medicinal herbs and the use frequency of cinnamon, almond, ginger and licorice is comparatively high; almond, cinnamon, licorice and atractylodes are frequently compatible with other medicinal herbs in the formula; most medicinal herbs are beneficial to spleen and liver and warm in nature, which are in accord with the features of liquor; the medicinal efficiency of each formula mainly presents in heat clearing and removing obstruction toit, and such efficiency might be related to the antibacterial effects of medicinal herbs; and most formulas emphasize antibacterial functions and blood circulation-promoting functions.
