Preliminary Study of Risk Indicators of Steam Use in Distilleries

Steam is widely used in liquor-making industry, and the quality of steam has a great influence on the taste and quality of liquor. In this study, a total of 29 risk indicators were identified from all aspects including supplier water source, technology, pipeline and workshop use procedures etc. Through the screening and the rating of the 29 risk indicators, 26 indicators were finally screened out as quality control and risk prevention indicators. Then the grading of these 26 indicators was performed and the risk-monitoring standards of steam use in liquor-making industry were formulated, which could eliminate the hidden danger in steam use, reduce steam safety risk from the source, ensure the absolute safety of steam water source, and provide steam risk control experience for other distilleries.
