浓香型白酒中几种重要风味物质碳稳定同位素的测定(126)

摘要 建立了一种检测浓香型白酒中几种重要风味物质碳稳定同位素(δ13C)的方法。将丙酮与浓香型白酒混合后,用气相色谱法(GC)分离白酒中各种可检测的风味物质,再用燃烧转化装置GC Isolink将之分别转化为CO2,最后用稳定同位素比质谱(IRMS)测定各风味物质的δ13C。结果表明,该方法能准确地测定浓香型白酒中几种重要风味物质(异戊醇、己酸乙酯、乳酸乙酯、乙酸和己酸)的碳稳定同位素比值,稳定性好、风味物质分离度佳,重复测定标准偏差均小于稳定同位素精度测试允许值 0.2 ‰,完全满足测定需求,为浓香型白酒鉴别提供了有效的技术手段。

英文摘要 A method for detecting stable carbon isotope ratios (δ13C) of several important flavoring substances in Nongxiang Baijiu had been developed. After the mixing of acetone and Nongxiang Baijiu, all kinds of detectable flavoring substances in liquor were separated by GC, and then transformed into CO2 respectively by GC Isolink. Finally, δ13C of each flavoring substance was determined by IRMS. The results proved that such method could accurately determine δ13C of isoamyl alcohol, ethyl hexanoate, ethyl lactate, acetic acid and caproic acid in Nongxiang Baijiu, and it had the advantages of good stability and high separation, and its repeated measurement standard deviation was less than the allowable value (0.2 ‰) of stable isotope accuracy test. This method could fully meet the detection requirements and it provided an effective technology for the identification of Nongxiang Baijiu.
