红曲霉产色素和桔霉素影响因素的研究进展(109)

摘要 红曲霉是我国应用广泛的微生物菌种,其次级代谢产物在食用和药用方面有重要的利用价值。其中红曲色素广泛应用于食品着色和酿酒,但是红曲霉也会产生对肾脏有毒害作用的真菌毒素桔霉素,因此很有必要找出与高产红曲色素低产桔霉素相关的影响因素。从菌种、培养基(氮源、碳源、金属离子、pH值)、培养条件(光照、温度、氧溶度)等方面综述了高产红曲色素低产桔霉素的影响因素与培养条件,以便于开发生产高产红曲色素低产桔霉素的产品。

英文摘要 Monascus, a microbial strain, is widely used in China and its secondary metabolites have important use values in food and medicinal fields. Monascus pigments are widely used in food coloring and wine-making. However, Monascus could also produce mycotoxin citrinin which is harmful to the kidney. Accordingly, it’s necessary to find the factors related to high-yield of pigment and low-yield of citrinin. In this paper, the influencing factors were summarized from the aspects of microbial species, culture mediums (nitrogen source, carbon source, metal ions, pH values), and culture conditions (light, temperature, and oxygen solubility), which was helpful for developing Monascus product with high-yield of pigment and low-yield of citrinin.
