金种子人工窖泥及其黄土原料理化成分的检测分析(114)

摘要 优质窖泥是生产高质量浓香型白酒的基本条件,土质是决定窖泥质量的关键因素。窖泥的水分、温度、pH值、矿质元素、有机质成分等非生物因素,是窖泥微生物生存、繁衍、代谢的前提条件。掌握窖泥及其黄土原料的基本理化性质和主要化学成分的种类及含量,有利于制订科学、合理、优化的人工窖泥培养方案。以金种子人工窖泥及其黄土原料为研究对象,采用电感耦合等离子体光谱法、分光光度法等多种分析方法对其相关理化指标进行检测分析,为人工窖泥的制备及质量控制提供依据。结果表明,金种子人工窖泥高度富含有机物,以当地的黄土为原料制备人工窖泥,需要添加大量的有机质,窖泥中Cd、Pb、Cr等重金属的单项污染指数值显著低于国标限量水平,表明企业制备的人工窖泥无重金属污染的风险。

英文摘要 High quality pit mud is the basic condition for producing quality Nongxiang Baijiu, and soil quality is the key factor to determine the quality of pit mud. The abiotic factors including moisture content, temperature, pH, mineral elements and organic substances in pit mud are the prerequisites for the survival, reproduction and metabolism of microbes in pit mud. The understanding of the basic physiochemical properties of pit mud and the varieties and content of its main chemical components is beneficial to scientific, rational and optimized culture of artificial pit mud. In this paper, Jinzhongzi artificial pit mud and its raw material (yellow soil) were used as the research objects, and inductively coupled plasma spectrometry, spectrophotometry and other analytical methods were used to analyze their physiochemical indexes, which provided useful reference for the preparation of artificial pit mud and its quality control. The research demonstrated that, the preparation of Jinzhongzi artificial pit mud by local yellow soil required the addition of large amounts of organic substances, besides, the pollution index of Cd, Pb, Cr and other heavy metals in pit mud was significantly lower than international standard limit level, which proved that there was no heavy metal pollution risk in the prepared artificial pit mud.
