椰壳活性炭处理酱香型白酒中塑化剂(DBP)的研究(70)

摘要 采用活性炭吸附法处理塑化剂含量较高的酱香酒,但在吸附塑化剂过程中不可避免地造成白酒风味成分的损失。如何使白酒在降低塑化剂的过程中保持原有的典型风格,成为人们研究的热点。对椰壳活性炭和其他型号活性炭的降低塑化剂的(DBP)效果作了对比实验,探索了椰壳活性炭处理塑化剂的最佳工艺参数。结果表明,采用3#椰壳活性炭能够更好地去除酱香酒中塑化剂并保持原酒典型风格,DBP含量小于5.38 mg/Kg的基酒,最适活性炭添加量为2 ‰,最佳处理时间为3 h。

英文摘要 Activated carbon absorption in the treatment of plasticizer in Jiangxiang Baijiu would inevitably result in the loss of flavoring compounds. How to keep the original typical styles in DBP removal process has become the research focus. In this study, DBP removal effects of coconut shell activated carbon and other activated carbon were compared. Furthermore, the best technical parameters of coconut shell activated carbon were summed up as follows: 3# coconut shell activated carbon was an ideal choice; as DBP content in base liquor was less than 5.38 mg/kg, the best adding level of activated carbon was 2 ‰, and the best processing time was 3 h.
