换糟配料工艺在浓香型白酒机械化酿造生产中的应用(85)

摘要 针对浓香型白酒机械化酿造生产中,老窖池升温幅度小、产酒少,新窖池产酒多、质量欠佳的工艺技术问题,提出了一种新型浓香型白酒酿造工艺模式,此工艺目的是稳定老窖池产量,提高新窖池质量,达到产、质均衡。研究表明,与对比窖相比,实验老窖池出酒率高出3.18个百分点,优级酒及以上产量与对比窖池无显著差异;实验新窖池取优率高出8.04个百分点,多产优级酒及以上产量52.68 kg,酒质显著提升。

英文摘要 In the mechanized production of Nongxiang Baijiu, temperature rise is slight and liquor yield is less for aged pits, while liquor yield is high for newly-built pits but its liquor quality is quite poor. In this paper, a new technology of exchanging and blending fermented grains was recommended. The use of such technology could stabilize the yield of aged pits, improve liquor quality in newly-built pits, and achieve the goal of the equilibrium between liquor yield and liquor quality. Compared with the contrast pits, liquor yield in experimental pits increased by 3.18 %. There was no significant difference in the yield of quality liquor between experimental pits and contrast pits. Meanwhile, excellent liquor extraction rate of newly-built pits were 8.04 % higher and liquor quality got improved evidently.
